
Goat Cheese and Milk Production
For the last thirty years, Wharf Farm has been the home of a herd of milking goats; most of the milk is made into cheese and some is sold for drinking.
Originally we made Single and Double Gloucester cheese; now we find that a Double Gloucester, Caerphilly and Cotswold recipe are most useful and meet customers requirements. Soon we will enlarge the cheese dairy, and I will start making some soft goats cheese. Sheep cheese is no longer made, because we are about to modify the milking parlour, and the new design will make it difficult to ensure that both milks are kept completely separate.
The workforce consists of me, (Judy), milker and cheesemaker; I attend and run Farmers′ markets, teach cheesemaking occasionally at Hartpury College and give cheesemaking demonstrations to groups. Bert, my husband, feeds the animals, milks and drives the tractor; making hay, cultivating and cleaning out the animal sheds (he also does some relief milking for other people).
